What exactly do you want to change there?
All our settings for Shop/Categories you can find in Theme Options > WooCommerce.
If you want to edit archive page (Shop or Blog) using Elementor you need to use Elementor Pro, the default Elementor does not have such option. If you have Elementor Pro, contact their support to get assistance.
