You can use WooCommerce translation files to rename sorting options. WooCommerce does not have the option to add/remove sorting options, only choose the default sorting in Customizer > WooCommerce > Product catalog. I suppose you can try to extend sorting values using maybe some third-party plugin like https://wordpress.org/plugins/woocommerce-extra-product-sorting-options/ or similar that suit your needs.
